Perfect Potato Salad

Enjoy this savory potato salad recipe, perfect for any holiday occasion!

Ingredients:

  • 5 potatoes, peeled and cut into bite-size chunks (about 2lbs)
  • 1 cup plain yogurt
  • ½ cup mayonnaise
  • 1 tbsp prepared horseradish
  • 4 radishes, thinly sliced
  • 2 stalks celery, diced
  • 2 large green onions, thinly sliced
  • ¼ cup fresh parsley, chopped
  • ¼ cup fresh dill, chopped
  • Salt and pepper, to taste

Instructions:

  • Place potatoes in a pot and just cover with water. Place a lid partially over the pot and bring water to a boil.
  • Reduce heat and simmer for roughly 5 minutes or until potatoes are tender. Be careful not to overcook.
  • Drain potatoes well.
  • In a separate large bowl, stir yogurt, mayonnaise, horseradish, salt, and pepper.
  • Add radishes, celery, green onions, parsley, and dill, and mix.
  • Add warm potatoes and stir to combine.
  • Refrigerate for at least one hour before serving.
  • Taste and adjust seasonings if desired.
  • Serve and enjoy!
